A recent creation inspired by the St Felicien. Like its cousin the cheese has a creamy texture and sweet. It is appreciated for its delicacy.
A light white down grows during ripening and as soon as the dough starts to become soft and tender, it is timely. Of course the France full of many AOC, but it is important to us to support some courageous cheesemakers who like to think outside the box.
