Cabri Ariégeois

In its wooden box, swaddled in a spruce strap, Cabri is inspired by Vacherin Mont d’Or.

More than thirty years ago, the famous Cabrioulet cheese dairy was created in the Pyrenees, at the bottom of a valley in the Ariège department.

Marie-Suzanne and Philippe Garros have developed unique, innovative cheeses with a remarkable identity. They produce their goat’s milk there, and transform it into nuggets, some of which have become emblematic.

The Cabri is inspired by the Mont d’Or, its distant cousin in the Jura mountains. Like him, it comes in a wooden box, swaddled in a spruce strap. The woody character of this wine, combined with its powerful goaty notes, creates a surprisingly well-balanced union despite its pronounced flavors. Ideally, it should be eaten with a spoon, when the ripening process has taken its toll on the cheese.
