Der Tomme ist eine Institution in seiner Region, ein uraltes Erbe, das die Familien ern\u00e4hrte.<br\/>Denn jeder Bauernhof hat sein eigenes Rezept, seine eigene Art und Weise und seine eigene Kunst, genau wie dieser sch\u00f6ne Alpenk\u00e4se, den man je nach Jahreszeit sch\u00e4tzen und erkennen sollte. Er hat kein au\u00dfergew\u00f6hnliches Image, bietet aber dennoch gro\u00dfe Momente des Genie\u00dfens.<\/p>\n\n<p><br\/>Es ist auch ein K\u00e4se mit vielen Beschreibungen, immer ein kleiner Laib, der manchmal in Felsent\u00f6nen von Ocker und Gelb, dann wieder n\u00fcchterner in einem Granitgrau erstrahlt, oft glatt, aber auch regelm\u00e4\u00dfig mit Wachs bedeckt ist, das ihn in einen antiken Staub h\u00fcllt. Der Teig ist im Allgemeinen geschmeidig, oft in einem sch\u00f6nen, kr\u00e4ftigen Goldton, manchmal auch etwas blasser. Sie ist mit kleinen \u00d6ffnungen versehen, die mehr oder weniger stark ausgepr\u00e4gt sind. Der Geschmack schwankt zwischen frischer Butter und Pilzen. Sie ist oft mild mit einer recht einnehmenden Frische, die an sch\u00f6ne Wiesen in h\u00f6heren Lagen erinnert.
