Sein Stilton ist kein Stilton, denn er ist aus Rohmilch, kommt vom Bauernhof und hei\u00dft Stichelton.<\/p>\n\n<p>In Richtung der n\u00f6rdlichen Grenze des Sherwood Forest in Nottinghamshire verarbeitet er Kuhmilch aus der \u00f6kologischen Viehzucht auf der Collingthwaite Farm. Dieses Experiment begann 2006 und hat sich bereits einen Namen gemacht.<\/p>\n\n<p>Das Rezept f\u00fcr Stichelton ist besonders, es erfordert eine langsame Fermentation der Milch unter Verwendung von sehr wenig Milchs\u00e4urebakterien sowie tierischem Lab. Der so gewonnene Quark ist \u00e4u\u00dferst empfindlich und erfordert eine sehr behutsame Pflege. Gro\u00dfe Finesse, buttrige Textur und nat\u00fcrliche Komplexit\u00e4t &#8211; der beste Stilton ist nicht ein Stilton, sondern ein
