Aber auch als Bauernk\u00e4se hat er im Laufe der Jahre leider viel von seiner Identit\u00e4t und seinem Charakter verloren, und es hat sich manchmal als Herausforderung erwiesen, St\u00fccke von talentierten Erzeugern zu finden. Es gibt sie jedoch, und sie formen einen K\u00e4se mit Pers\u00f6nlichkeit, der weit entfernt ist von den fadenscheinigen Produktionen, die allzu h\u00e4ufig gedeihen.<br\/>Bereits ein w\u00fcrdiger Saint-Nectaire muss ein wildes Aussehen haben, bedeckt mit Mucor, der sich als aschgrauer Flaum erhebt. Abgewischt und wieder getrocknet, macht er schlie\u00dflich einer unregelm\u00e4\u00dfigen Kruste Platz, die nach feuchtem Stroh und dem Keller riecht. Der hellbeige Teig weist seltene \u00d6ffnungen auf und quillt oft in gro\u00dfz\u00fcgiger Creme \u00fcber. Im Mund zeigen sich Noten von Unterholz, Pilzen und Humus. All diese erdigen Ankl\u00e4nge sind eine Hommage an einen K\u00e4se, der ein wenig Zeit und Pflege im Keller ben\u00f6tigt, um sie zum Ausdruck zu
