{"id":2406,"date":"2023-01-09T13:29:27","date_gmt":"2023-01-09T12:29:27","guid":{"rendered":"https:\/\/www.fromagerieantony.fr\/fromage\/fourme-de-montbrison\/"},"modified":"2023-11-20T18:43:24","modified_gmt":"2023-11-20T17:43:24","slug":"fourme-de-montbrison","status":"publish","type":"fromage","link":"https:\/\/www.fromagerieantony.fr\/de\/fromage\/fourme-de-montbrison\/","title":{"rendered":"Fourme de Montbrison"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Ein leicht gelber Teig und eine ganz eigene Typizit\u00e4t.<\/p>\n\n<p class=\"wp-block-paragraph\">AOP aus der Auvergne, weniger bekannt als der Ambert, teilt aber auch mit ihm die typische Zylinderform, von der beide ihre Namen haben.<\/p>\n\n<p class=\"wp-block-paragraph\"><br\/>Hubert Tarit stellt seinen K\u00e4se nach einem althergebrachten Rezept her; wie fr\u00fcher werden die Fourmes w\u00e4hrend des Formens gesalzen und \u00fcber Holzrinnen abgetropft, die der Rinde ihre authentische Farbe verleihen werden. Nach einigen Tagen der Reifung werden die Fourmes mit langen Nadeln angestochen, um das Auftreten der blauen Farbe zu f\u00f6rdern. Der Fourme wird langsam in feuchten, k\u00fchlen und nat\u00fcrlichen Kellern gereift.<\/p>\n\n<p class=\"wp-block-paragraph\"><br\/>Der Fourme de Montbrison enth\u00e4lt einen leicht gelben, geschmeidigen und duftenden Teig, der dezent blau marmoriert ist. Schlie\u00dflich bringt die Reifung einen cremigen Teig mit einem milden, feinen Geschmack zum Vorschein, der bei einem l\u00e4ngeren Kellerschlaf ein viel feurigeres Temperament zeigen
