Dazu geh\u00f6rt auch der in Hochsavoyen produzierte Abondance.<br\/>Da er von der g.U. profitiert, stammen nur einige wenige traditionelle und typische St\u00fccke aus b\u00e4uerlicher Herstellung. Der Abondance-K\u00e4se ist kl\u00f6sterlichen Ursprungs und wurde auch nach dem Tal und der Kuhrasse benannt, die f\u00fcr seine Entstehung verantwortlich waren.<br\/>Sch\u00f6ner K\u00e4se mit konkavem Absatz, der mehrere Kilo wiegt. Die Rinde ist bernsteinfarben und von den Rillen des Leinentuchs gepr\u00e4gt, das zu seiner Herstellung verwendet wurde. Die Paste hat einige kleine \u00d6ffnungen und reicht von Elfenbein bis zu einem kr\u00e4ftigen Goldgelb. Die Nase erinnert je nach Jahreszeit an Butter, frisches Gras oder trockenes Heu. Die Textur ist in der Jugend weich und zart und entwickelt sich mit der Zeit zu rissigem Marmor. Zarte Milchnoten zu Beginn, die Reifung verst\u00e4rkt seinen Charakter und behauptet eine ausgepr\u00e4gtere Salzigkeit, leicht pikante R\u00f6stnoten k\u00f6nnen
