Dieser Widerspruch findet sich in seinen g.U. wieder, wo sich sowohl der Bauer als auch die gro\u00dfe Molkerei hinter demselben Namen verstecken k\u00f6nnen.<\/p>\n\n<p>So ist es auch mit dem im 19. Jahrhundert entstandenen Blauschimmelk\u00e4se, der pasteurisiert und aus der Lebensmittelindustrie oder aus Rohmilch und vom Bauernhof stammen kann. Da die Produktion auf dem Bauernhof viel kleiner und seltener ist, sind es gerade die St\u00fccke aus dieser Produktion, die geduldig in unseren Kellern gedeihen.<\/p>\n\n<p>Der mit Penicillium roqueforti ges\u00e4te Blauschimmelk\u00e4se verstr\u00f6mt einen Geruch nach Unterholz, Pilzen und Humus. Eher geschmeidig und schmelzend im Mund, die ersten Noten sind wie die Nase, ein Spaziergang im Wald; die Cremigkeit des K\u00e4ses z\u00fcgelt jedoch seinen wilden Charakter, der Abgang ist zwar salzig, bleibt aber ausgewogen.
