Au\u00dfer dem Munster gibt es jedoch in den Vogesen vor allem einige interessante Hofprodukte.<\/p>\n\n<p class=\"wp-block-paragraph\">Bargkass kommt aus dem Dialekt und bedeutet Bergk\u00e4se. Es bezeichnet keinen bestimmten K\u00e4se, da jeder Bauer seinen K\u00e4se nach seiner Inspiration und seinem Talent herstellt. Das bedeutet, dass es viele Unterschiede gibt. Die Familie Baumann in Linthal stellt einen ber\u00fchmten K\u00e4se her; seit kurzem mischt sie sogar die Milch ihrer Vogesenfrauen mit der Milch der kleinen Ziegenherde, die sie vor kurzem erworben hat, um einen wirklich atypischen und seltenen K\u00e4se zu kreieren.<br\/>Schon vom Aussehen her ist der Bargkass von Frantz, wie wir ihn liebevoll nennen, ein sch\u00f6ner runder Laib von einigen Kilogramm Gewicht, eine dunkle Kruste, pigmentiert mit wundersch\u00f6nen Oberfl\u00e4chenblumen in Felsfarben. Der Teig ist mit kleinen Augen verstreut, hat ein sch\u00f6nes, sattes Gold und duftet nach frischer Butter. In jungen Jahren geschmeidig, wird er mit zunehmender Reifung trockener und gewinnt an Temperament. Sein Geschmack erinnert an die Blumenwiesen, in deren Mitte er geformt wurde, ganz sanft, gewinnt er mit zunehmendem Alter eine nicht unangenehme Sch\u00e4rfe und eine vollendete Komplexit\u00e4t. Leider ist seine Produktion gering und wir bekommen nur ein paar Laibe pro Jahr.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bargkass kommt aus dem Dialekt und bedeutet
