In diesem Alter beginnen wir, die bekannten Ufer der traditionellen Aromen des Comt\u00e9 zu verlassen, um zu neuen und unerwarteten Geschmackshorizonten zu segeln.<\/p>\n\n<p>Bevor wir auf letztere eingehen, wollen wir uns zun\u00e4chst mit der Kruste und dem Teig besch\u00e4ftigen. Hier gibt es keinen langweiligen K\u00e4se ohne Relief, sondern unser sch\u00f6ner Laib hat auf seiner unbeleuchteten Seite ein Mondkleid an, das mit sanften Verwerfungen und leichten Kratern \u00fcbers\u00e4t ist. Der Teig leuchtet in einem intensiven Gelb, und die Kristallisation beginnt ihre Arbeit zu tun, indem sie den Stoff marmoriert.<br\/>Trotz allem bietet dieser Comt\u00e9 immer noch und immer wieder eine sch\u00f6ne F\u00fclle, eine Erinnerung an seine fr\u00fche Jugend, sch\u00f6ne Kauigkeit im Prolog, die schnell verblasst, um mit einer trockeneren und intensiveren Materie zu enden, Kr\u00e4uter und Blumen machen dann Heu und Trockenfr\u00fcchten Platz, die Frische l\u00e4sst nach, aber ein sch\u00f6ner Abgang bleibt bestehen.
