Wir sind sehr an Klosterk\u00e4se interessiert, da religi\u00f6se Orden viel dazu beigetragen haben, die Rezepte vieler K\u00e4sesorten \u00fcber die Jahrhunderte hinweg weiterzugeben und so einen Teil des K\u00e4seerbes zu formen.<\/p>\n\n

Die angesehene Zisterzienserabtei C\u00eeteaux, die 1098 gegr\u00fcndet wurde, produziert unter der Leitung von Bruder Jean-Claude ihren eigenen Bauernk\u00e4se. Haupts\u00e4chlich vor Ort verkauft, verf\u00fcgen wir gl\u00fccklicherweise \u00fcber eine kleine Zuteilung von einigen Kilogramm pro Woche.<\/p>\n\n

Der C\u00eeteaux ist ein Weichk\u00e4se mit gewaschener Rinde. Er hat eine falbe Farbe, die im Laufe der Zeit einen Ziegelton annimmt. Sein Teig ist wei\u00df mit einigen Augen, die unauff\u00e4llig darauf verteilt sind. Die Nase ist animalisch, ein starker Duft, der beim Reifen und Reiben etwas nachl\u00e4sst, da dieses kl\u00f6sterliche Produkt in der Tat regelm\u00e4\u00dfige Waschungen erfordert. Der Geschmack wird oft als fruchtig dargestellt, was in der Mitte seiner Reifezeit auch stimmt, aber er reicht von sehr oder sogar zu leicht in der Jugend bis hin zu einem viel st\u00e4rkeren Charakter in seinem letzten Stadium.
