Das Alpenmassiv produziert neben seinen traditionellen Hartk\u00e4sen, die f\u00fcr die Lagerung geschliffen sind, auch viele weiche K\u00e4sesorten, darunter diese g.U., die f\u00fcr ihre b\u00e4uerliche Produktion eine gr\u00f6\u00dfere Anerkennung verdient. Denn obwohl er oft \u00fcberstrapaziert und in Rezepte verbannt wird, verdient er dennoch seinen Platz roh auf einem Tablett, um die immense Palette seiner Aromen zu entdecken.Als gro\u00dfe Reblochon-Affineure vor der Ewigkeit lie\u00df uns die Familie Paccard wiederentdecken, dass ein Reblochon ohne Z\u00f6gern zu den besten Degustationsk\u00e4sen geh\u00f6ren kann. Die Vielfalt der Produzenten, die alle einen anderen K\u00e4se anbieten, tr\u00e4gt dazu bei, dass es sich um ein gro\u00dfartiges handwerkliches Produkt handelt.Die Rinde ist rund oder sogar ein wenig oval und manchmal mit einem feinen wei\u00dflichen Flaum \u00fcberzogen, der ein ockerfarbenes Kleid erahnen l\u00e4sst. Einige St\u00fccke sind hoch mit einem geraden Absatz, andere h\u00e4ngen durch und versprechen, bei der kleinsten Kerbe \u00fcberzulaufen. Jeder Reblochon ist einzigartig, aber alle sind von einer ausgepr\u00e4gten Rustikalit\u00e4t gepr\u00e4gt. Der typische Geschmack von Heu ist regelm\u00e4\u00dfig vorhanden, die cremige Textur wird durch einen Hauch von N\u00fcssen und frischen Pilzen aufgewertet.
