Eine Kreation der ber\u00fchmten K\u00e4serei Cabrioulet<\/p>\n\n

In den Pyren\u00e4en, am Ende eines Tals in der Ari\u00e8ge, entstand vor \u00fcber drei\u00dfig Jahren die ber\u00fchmte K\u00e4serei Cabrioulet.Marie-Suzanne und Philippe Garros haben hier unvergleichliche K\u00e4sesorten entwickelt, die von einer bemerkenswerten Identit\u00e4t gepr\u00e4gt sind. Sie produzieren dort ihre Ziegenmilch und verarbeiten sie zu Nuggets, von denen einige wie der Petit Fianc\u00e9 und der Tomme de ch\u00e8vre ari\u00e8geoise zum Markenzeichen geworden sind. Sie haben seit kurzem seinen Cousin aus Kuhmilch mit dem Namen Ph\u00f6bus entwickelt.Dieser sieht nicht wie ein klassischer Pyren\u00e4enk\u00e4se aus, mit seiner verblassten roten Rinde, die mit wei\u00dfen Fl\u00e4chenbl\u00fcten beflaumt ist, und seinem sehr cremigen Teig. Diese ist oft von einem sch\u00f6nen, kr\u00e4ftigen Gelb, das auf ihre Herkunft vom Rind hinweist. In der Nase sind die Ausd\u00fcnstungen des letzteren gut pr\u00e4sent, wie auch im Mund, wo er sich als eine der rassigsten Spezialit\u00e4ten auszeichnet, insbesondere wenn die Reifung ihre Arbeit getan hat.<\/p>\n","protected":false},"excerpt":{"rendered":"
