Er ist fast ein nationales Symbol, aber auch ein K\u00e4se, der im Mittelpunkt zahlreicher Polemiken und Grabenk\u00e4mpfe steht, in denen sich Industrie und Handwerker \u00fcber seine Bezeichnung, sein Lastenheft, sein Produktionsgebiet usw. bekriegen.<\/p>\n\n

Da der Name nie eingetragen wurde, kann man unter Camembert auch K\u00e4se finden, der am anderen Ende der Welt hergestellt wurde. Nur die Bezeichnung Camembert de Normandie garantiert ein lokales Produkt, das handwerklich mit K\u00fchen der Normandie-Rasse und nat\u00fcrlich mit Rohmilch hergestellt wird. Letzteres versuchen die Hersteller unter anderem zu umgehen, um pasteurisierte oder thermisierte K\u00e4sesorten anzubieten, die weniger kompliziert und vor allem billiger herzustellen sind und mit einem weit \u00fcber die Landesgrenzen hinaus bekannten Namen leicht exportiert werden k\u00f6nnen. Es ist ein Kampf, der seit Jahrzehnten andauert und regelm\u00e4\u00dfig neu entfacht wird.Wir unsererseits haben das Gl\u00fcck, in unseren Kellern den Camembert de Normandie fermier der Familie Mercier reifen zu lassen. Es war ein langer Weg der Geduld und des gegenseitigen Vertrauens, bis man das Recht hatte, sie zu kaufen, da die Produktion eines solchen Produkts naturgem\u00e4\u00df sehr begrenzt ist.Wir wollen an dieser Stelle alle falschen Vorstellungen abschneiden, die die letzten Zeilen nahelegen k\u00f6nnten. Ja, eine b\u00e4uerliche Produktion dieser g.U. ist sehr selten, ja, seine Herstellung ist vollkommen handwerklich, die Milch der normannischen K\u00fche, die reichen Wiesen der Bocage, alles tr\u00e4gt dazu bei, ihn zu einem Schatz zu machen. Vor allem aber ist es ein Produkt mit einem Charakter und einer Identit\u00e4t, die \u00fcber alles hinaus behauptet werden, selbst wenn ein junger Camembert Mercier einen Geschmack hat, eine pers\u00f6nliche Note, die unwissende Liebhaber verwirrt. Ein solcher K\u00e4se will gelernt sein, man muss alles vergessen, was man \u00fcber einen Camembert zu wissen glaubt. Er ist sozusagen die Quintessenz des Bauernprodukts, das sich im Laufe der Jahreszeiten ver\u00e4ndert, launisch, zerbrechlich ist und viel Aufmerksamkeit erfordert, aber seltene Geschmackserlebnisse bietet.<\/p>\n","protected":false},"excerpt":{"rendered":"
