Es ist ein sehr enges Gletschertal, das im Norden von den Bergmassiven Beaufortain und Mont Blanc und im S\u00fcden von der Vanoise begrenzt wird.<br\/>Der Tarentais entstand in den 1970er Jahren und wird nach der Methode des Milchquarkes hergestellt. Die Ziegenrasse ist die Alpenschamotte, die sich gut an das sehr raue Winterklima und die steilen Berge der Alpen angepasst hat. Die Ziege produziert an durchschnittlich 275 Tagen im Jahr etwa 750-800 kg Milch.<br\/>Die Ziegen werden f\u00fcnf Monate lang auf einer Alm in 1800 m H\u00f6he mit frischem Berggras gef\u00fcttert.<br\/>Den Rest des Jahres, sieben Monate lang, werden sie auf dem Bauernhof in 1200 m H\u00f6he mit Heu und Getreide gef\u00fcttert.<br\/>Es ist ein Ziegenk\u00e4se, der durch seine Aromen auff\u00e4llt. Im Fr\u00fchling ist er sehr blumig, in der Nachsaison oft animalischer und kr\u00e4ftiger. Er schmeckt sowohl cremig, wenn er jung ist, als auch br\u00f6ckelig, wenn er reift und dann eine sch\u00f6ne Mineralit\u00e4t besitzt.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Eine
