Im Schatten des ehrw\u00fcrdigen g.U. Roquefort werden viele kleine K\u00e4sesorten, haupts\u00e4chlich aus Schafsmilch, inmitten der h\u00fcgeligen T\u00e4ler der Region hergestellt.<\/p>\n\n<p class=\"wp-block-paragraph\">Der Sandrillon ist eine neue Entdeckung von Jean-Fran\u00e7ois w\u00e4hrend eines Aufenthalts im S\u00fcdwesten Frankreichs. Die Familie Lazuech stellt hier kleine Bauernk\u00e4se aus Schafsmilch her, darunter den Sandrillon, der seinen Namen von der Asche, mit der er bedeckt ist, und dem Vornamen seiner Sch\u00f6pferin Sandrine hat.<br\/>Die Rinde ist intensiv blau, wenn der K\u00e4se frisch ist, und hellt sich bei der Reifung zu Pastell auf. Sie wellt sich, wenn der K\u00e4se cremiger wird. Der Teig bleibt immer makellos wei\u00df. Die Aromen dr\u00fccken Frische aus, gew\u00fcrzt mit der typischen Note von Schafsk\u00e4se, aber nicht \u00fcberm\u00e4\u00dfig.
