Haute-Garonne and Occitanie in general are lands where goat and sheep farming has long flourished. Numerous small farms produce fine cheeses that reflect the flavors of a region with a climate that’s more varied than it seems.

Laurentine is produced on a farm in the Toulouse region, and Xavier, the region’s leading cheese ripener, introduced us to it.

The cheese is distinguished by the small fern leaf that decorates it like a seal. The natural ivory rind conceals a crumbly, creamy paste. It’s a mild, highly aromatic cheese, inevitably reminiscent of the herbs of the garrigue, with thyme in majesty.
