Mimolette-called ball-Lille was apparently there the favorite cheese of General de Gaulle.
The orange pulp specific due to a natural dye "the Annatto," was developed in the time of Colbert to differentiate between French and Dutch productions. The extra-old mimolettes or "brittle old'' are refined at least 20 months. This is a ball hard and brittle orange to light brown.
