Chaource cheese is a very old, already known in the Middle Ages. Charles the Fair, crossing Chaource, did present itself, and Margaret of Burgundy demanded at his table.

This cheese was probably created by the monks of the Abbey of Pontigny. It is named after a city capital of the Champagne district of the Dawn. This ancient Gaulish village is located about thirty kilometers from Troyes
