A little goat’s cheese “munster”.

Alas, our beloved Alsace is not a historic cheese-producing region, apart from the Munster PDO, but there are a few talented producers, often in the Vosges mountains.

The Geisster is a recent creation of the Baumann family at the Pensées Sauvages farm in Linthal. Producers of Munster and Bargkass, they are biodynamic hardliners who embody the ideals of responsible, reasoned agriculture.

The son bought a few goats about 1 year ago, and once the sheepfold was built, he started making cheese, and Geisster was born. It takes its name from the Alsatian Geiss for goat, contracted with the end of the word munster. And that’s exactly what it is, a little goat’s milk Munster, farmhouse and organic.
