Originally, this cheese is a family consumption. Its development dates from the nineteenth century, and the town of Selles-sur-Cher, the main center for the collection and resale, gives it its name.
The first trace of written information about the Selles-sur-Cher goes back to 1887. However, we can assume that the goat cheese production has existed for several centuries. Selles-sur-Cher is one of the famous AOC goat Berry. The soil is conducive to the breeding of goats with a mild climate.
