Saint-Clément

So easily recognizable with its square shape, its hole and the ash that covers it.

Catherine Pin, helped by her children Juliette, Léopoldine and Florent, have settled in the Dordogne at the Teintellac farm.
Catherine, a Parisian by birth, discovered the world of goats in the Cévennes. On her farm, she produces the region’s flagship cheese, Pélardon. Neo rural, with no experience, she quickly acquired a good mastery of this goat-based production process.
The adventure began in 2000 in the village of St Clément in the Périgord region.
The square shape of their specialty is not the only attraction of this cheese. Many years of experience combined with organic farming have proved their worth. St Clément is a model of finesse and smoothness.
